Elisson conceived EPOC in 2004 and has led its evolution for over two decades — from a management system to a POS, ERP, and automation platform for food service. He holds a degree in Computer Science, with specializations in machine learning engineering and reinforcement learning, and brings to the product the rigor of scientific research in data science: he is a co-author of work on gene expression published in PNAS. The conviction behind it all is simple: a good decision comes from well-structured data.
This origin is what explains the house thesis: architecture comes first, functionality comes after. A chain that owns its own data decides better, standardizes without becoming rigid, and grows with less friction — and that's what the platform exists to deliver, from the point of sale to the boardroom's BI.
