1 – List the roles and responsibilities

The first step is to list every position that exists on your team.

This can vary a lot depending on the size and type of restaurant. After all, the team needed to run an à la carte restaurant is quite different from a self-service place or a burger joint, for example.

To make it easier, start by listing the departments (administration, kitchen, dining room service, delivery, cleaning, etc.). Then list the positions in each one, assessing your restaurant's needs.

2 – Organize the hierarchy

Next, organize the departments and positions according to the hierarchy, identifying who the leaders responsible for each area are and who should report to them.

One example is the kitchen team at a large restaurant. The leader is usually the executive chef, followed just below by the head chefs, sous chefs, cooks and kitchen assistants.

3 – Adapt it to your type of restaurant

As we mentioned earlier, each type of restaurant has its own characteristics and specific needs, which is why the org chart has to be adapted.

If your restaurant is small, your kitchen team can be as lean as one chef, one cook and one assistant, for example. If it is a large restaurant, you will probably have a team with more waiters and will need a service manager.
