Step 1: Define the theme or style

How do we put a little of all of that into the pot and make something from here, that has a face from here, that has a Brazilian expression?”

It's also good practice to create seasonal menus that follow the time of year. That way you can take advantage of the best ingredients of the season, vary the options, create new dishes, and always have something new for your customers.
